Loki Poké is a fast-casual eatery based in Bristol, specialising in fresh, Hawaiian-inspired poké bowls. Founded by Georgia Hussey in 2020 as a lockdown project, the business quickly gained traction for its health-conscious, sustainable meals. Loki Poké opened its first permanent site at Wapping Wharf in 2021, followed by a second location in the iconic St Nicholas Market in early 2025.
Known for its vibrant, customisable rice bowls made with sushi rice, house-pickled vegetables, and sustainable proteins like trout from Hampshire Chalk Stream and organic chicken from Stream Farm, Loki Poké quickly established a loyal customer base.
As demand surged and the brand earned recognition for its environmental efforts – including the British Street Food Sustainability Award and Uber Eats’ 2024 Climate Impact Trailblazer Award – the complexity of managing the business also increased.
